Dill and Honey Roasted Beets

About the Recipe


  • 6 purple beets

  • ½ oz olive oil

  • 2 tbsp chopped dill

  • 2 tbsp roasted walnuts (chopped)

  • 1 tbsp pure honey

  • 1 tsp garlic pure

  • salt and pepper to taste


Step 1

Wash the beets, then place into a large thick-bottomed pot.

Step 2

Simmer the beets until fork tender then strain.

Step 3

Run the beets under cold water and wipe off the skin with your hands.

Step 4

Cut the beets into wedges the beets and set aside.

Step 5

Toss the cooked beets in a large bowl with the garlic, honey dill and seasonings.

Step 6

Garnish with the toasted walnuts.
