Ginger Roasted Carrots

About the Recipe


  • 1 butternut squash, cut into a medium cubes

  • 3 medium carrots, sliced thick

  • Juice and zest from one large orange,

  • 1 Tbsp. Olive Oil

  • 1 Tbsp. fresh ginger juice

  • touch of honey.

  • Salt and Pepper to taste

  • 1 tsp thyme


Step 1

Preheat oven to 425F

Step 2

In a small bowl, mix the freshly squeezed orange and ginger juices

Step 3

Mix orange juice, ginger, honey and olive oil together

Step 4

In a bowl, mix the butternut squash and carrots with 2 Tbsp of the orange/ginger marinade.

Step 5

Place onto a baking sheet with parchment paper and sprinkle with salt and pepper

Step 6. Roast in the oven until done
