Roasted Squash
With Walnut Dukkah

About the Recipe


  • 2 butternut Squash

  • 1 cauliflower

  • 2 tbsp Walnut Dukkah

  • (or sprinkle with Cinnamon, cumin, turmeric, ground coriander)

  • Pinch of Salt and Pepper

  • 1 tbsp  Garlic Puree

  • olive oil to coat the squash

  • 1 tbsp honey


Step 1

Peel the squash

Step 2

Cut the squash in half and scoop out the seeds

Step 3

Dice the squash into small bite sized squares

Step 4

Cut the cauliflower into florets

Step 5

Place both into a bowl and add the ingredients while you toss it all together

Step 6

Once the squash is all coated put it onto a baking sheet lined with parchment paper and place it into a very hot over, 400-425F

Step 7 

Bake until soft and brown on the outside.
