  • 1 tsp Chopped thyme

  • 3-4 oz lobster meat

  • 1 cup grilled corn (use the cobs in your lobster stock)

  • 1 tsp tomato paste

  • ½ tsp smoked paprika

  • Salt and pepper to taste

  • Juice of ½ lemon


  1. Sweat the mirepoix with okra

  2. Add the garlic and jalapeno and tomato paste  before adding the lobster stock

  3. Reduce awhile before adding the chicken stock

  4. Bring to a boil again then simmer for 15-20 minutes

  5. Add  the remaining ingredients except the lobster meat
