About the Recipe
9 litres good quality Italian whole tomatoes peeled with basil
3 litres water
1 cup salt
1/2 cup sugar
½ cup chicken stock
2 chopped red pepper
1 large white onion
1 large red onion
¼ cup canola oil
¼ cup olive oil
1 large carrot
In a large thick bottomed pot heat the oil, chopped peppers, and onions
Allow them to simmer for 20-30 minutes
While the vegetables are simmering place all other ingredients into another large pot and simmer leaving the large carrot aside
When the peppers are tender add them and the oil to the tomato mixture and stir to incorporate..
Put the carrot into the sauce and push to the bottom
Allow the tomato sauce to simmer until the carrot is very soft and over cooked.
Turn off the sauce and puree with a stick blender or a food processor until you reach your desired texture.
Season with salt and pepper to taste
