About the Recipe

Ingredients

  • 1 Onion  (Diced)

  • 1 Carrot  (Diced)

  • 2 celery stalks(Diced)

  • 1 tbsp oregano

  • 1 tbsp garlic puree

  • 1 tsp parsley(chopped)

  • 2 tsp Chili Flakes

  • 7 cups Vegetable Stock

  • 1 ¼ white navy beans

  • 2 roma tomatoes (DIced)(optional)

  • Salt and Pepper to taste

  • 2 cups Chiffonade Kale

  • ¼ cup nutritional yeast

Preparation

  1. In a medium pot, add the onion, carrot, garlic, oregano, red chili flakes, parsley, and water. Cook and sweat until onions are translucent.

  2. Add the beans and vegetable stock to the pot. Cover and simmer until vegetables are tender, about 10 minutes. Remove from heat.

  3. Add kale and nutritional yeast. Stir well and cover until kale wilts.

  4. Stir in the diced tomato and adjust seasonings to taste
